249 - Sweet Fermentation
I occasionally ferment vegetables, mainly peppers, occasionally sauerkraut. Sometimes I add fruit to the mix. The smell of fermentation is wonderful.
Sometimes, though, when you have a lot of fruit sitting out on your kitchen table and it starts to ferment out in the open, it’s not so wonderful.
Every once in a while I compose a piece using the formula here, which is, melodically, I avoid using the tonic (in this case the note E) until the final bar. Of course it’s in the harmony, which is unavoidable.
